With the ongoing pandemic, we strive to make every attempt to ensure that we put our families at minimum risk of any health issue.  Being one of the most notable dairy farms in town, we want to take you through some simple ways to keep your milk fresh longer during this season and avoid the possibility of bacteria. Let’s understand how monsoons impact Desi Cow Milk quality. You might have noticed that your desi cow milk seems to be of a slightly more watery consistency during the rainy season and tends to spoil sooner if kept outside the refrigerator. Though the milk production and packaging remain the same at the farm, the difference is with the fodder. As our cows graze on the fresh green grass of the season, the water content in milk tends to increase. However, the nutrient value remains the same. Your A2 milk or Gir cow milk retains all its vitamins, minerals and essential fats, with the same taste and aroma, making it perfectly safe to consume desi cow milk from fresh dairy farms even during the rainy seasons. Moreover, we would like to share a few steps that you can use to ensure its longer shelf life. ●      If you are habitual of using thicker milk, consume the milk only after boiling it to remove the additional natural water from milk during this season. ●      Try consuming your raw A2 milk within a day during monsoons or, if leftover, boil it up to store for the next day. With a humid climate, keeping any food item sitting longer increases the risk of breeding microorganisms. ●      It is advisable to boil milk, if not kept at a temp below 37°C at all times, as monsoons provide a favourable environment for the growth of many microbes. ●      Boiling milk once every few hours has been an age-old tradition in our households to keep milk fresh longer (for when refrigeration is not available). ●      You can make curd or yoghurt from your leftovers of the day to avoid the risk of milk spoiling. Let us understand more, on Summer rutucharya -aka – Summer health & diet care  Diet recommended during Summer  Sweet, light, liquid food, a2 Desi Ghee (clarified butter) should be preferred. Plenty of liquids should be consumed in the form of water stored in mud pots, Drink prepared from fresh juicy fruits like mango, grapes, sugarcane, pomegranate (fruit juices), etc. with pepper and cardamom powder; tender coconut water will help to beat the heat. Similarly, a drink prepared by soaking dried grapes, fig, and dates in cold water for an hour and then churned will also help increase your stamina in this season. Buttermilk, made from pure A2 Desi Cow’s Milk also helps to increase vitamin B12 responsible for many functions inside the body to keep it healthy. Goodness of Desi Cow Ghee.

I bet you’ll agree with me that nothing can add more flavour to Dal Baati Churma like a spoonful of ghee. It not only enhances the taste and aroma of the food but increases its health and nutrition quotient too.  Ghee has been such an integral part of our traditional daily diet for ages. In India, where there is such a diversity of cuisines, that dishes change their character every 100 km, the only thing that probably remains constant is the love for Pure Desi Cow Ghee. People add the versatile desi ghee to their sheer kurma and their aloo paranthas with equal fondness. Ghee is simply milk fat acquired by separating the milk solids. The final quality of ghee depends on the quality of the milk used and the extraction process involved. There are various procedures to obtain ghee (from either cream, curd or butter). The traditional method of hand-churning curd to extract ‘Ghee’ using a wooden churner is known as bilona. This process involves almost 20 to 25 litres of desi cow milk to procure 1 kg of pure desi cow ghee. Bilona process is a lengthy time-consuming process but the ghee extracted using this process retains optimal nutrients (of milk) and is light and easy to digest. Milk from the desi cow breed is boiled, cooled, and transferred to earthen pots. A spoonful of curd (starter culture) is added to the milk and left at room temperature for roughly 6-8 hours to set into curds. The curd is then churned with a wooden churner to extract Makhan/loni from it. The extracted Makhan (butter) is then simmered so that the water evaporates leaving behind pure ghee. Whereas ghee that is processed using commercial methods is quite faster and more economical the flip side is that the ghee is too heavy for digestion.  Also, the major difference between the bilona process and the commercial process is fermentation. Bilona/Handchurning is the traditional process in which ghee is obtained from fermented Makhan whereas commercial processes usually use unfermented milk cream for ghee production. Fermentation helps to integrate the beneficial microbes into the product. Also, the rotational churning process allows air incorporation into the mixture boosting the medicinal properties of fat making the ghee light and readily digestible. This actually helps to turn it into the “Fit Fat”. When it comes to the quality of ghee, Desi Cow Milk Ghee made with the traditional bilona process wins hands down.  In ancient times Ghee was the preferred cooking medium. Our ancestors never failed to give shudh desi ghee its due importance because of the presence of healthy fats. Methi Mutter Malai A please-all dish, most popular curry of Punjabi cuisine, this sweet-strong gravy complemented with the scrumptious taste of fenugreek leaves is a go-to recipe for any lunch or dinner house-party. Ingredients ●      Chopped Fenugreek (methi) Leaves – 2 cups ●      Boiled Green Peas – ¾ cup ●      Desi Cow Milk – 1 ½ cup ●      Cow Ghee – 3 tbsp ●      Salt – to taste ●      Dry Garam Masala Powder – 1 tsp ●      Cumin Seeds – ½ tsp ●      Sugar – ½ tsp ●      Chopped Onion – ½ cup ●      Tomato Pulp – ½ cup ●      Chopped Green Chillies – 2 ●      Crushed Ginger – 1 tsp ●      Broken Cashewnuts – 1 tbsp Recipe ●      Heat ghee and add cumin seeds till they crackle. ●      Add fenugreek leaves and sauté on medium flame; keep aside. ●      To another kadhai, add desi cow ghee. ●      Add the ground paste of onion, tomato, ginger, green chillies, and cashew nuts. ●      Sauté for 2-3 minutes while stirring continuously. ●      Add milk and cook until creamy. ●      Add green peas, sautéed fenugreek leaves and all spices. ●      Sprinkle garam masala and cook for 2 minutes. ●      Serve hot with Punjabi Rotis or Lachha Parathas. Daal-Baati (Rajasthan’s speciality) A rich source of proteins and fibrous serving Daal (Lentils) with wheat cooked Baati’s are an age-old favorite! A traditional dish from Rajastha, thid one is served with lots of desi ghee and churma(sweet). However, adding milk to the process of making Baati not only makes it healthier, but softer at the core and crisper on the outside. Ingredients ●      Wheat Flour ●      Desi Cow Milk ●      Desi Ghee ●      Water Recipe ●      Add flour, ghee and milk to knead the dough. ●      Add little water (if required) to make a stiff dough. ●      Divide the dough into small round balls making a dent with the thumb on top. ●      Bake in Microwave or a Baati gas-oven. ●      Dip in hot melted ghee and serve with Daal and Churma. Ingredients ●      Broccoli Florets – 2 cups ●      Desi Ghee – 3 tbsp ●      Chopped Onions – ¼ cup ●      Plain Flour (maida) – 2 tbsp ●      Desi Cow Milk – 2 cups ●      Fresh Milk Cream – 2 tbsp ●      Salt – to taste ●      Nutmeg (jaiphal) Powder – a pinch Recipe ●      Heat ghee in a deep pan, add onions and sauté for 1 minute. ●      Add broccoli and sauté for 2 minutes on medium flame. ●      Add water and cook broccoli well, and keep aside to cool. ●      Blend in a mixer to make a thick purée. ●      In a pan, heat ghee; add flour and sauté while stirring. ●      Add milk and cook for 5 minutes. ●      Add Broccoli-onion purée, salt, nutmeg powder and mix well. ●      Cook for 3-4 minutes.
