Ingredients ●      Chopped Fenugreek (methi) Leaves – 2 cups ●      Boiled Green Peas – ¾ cup ●      Desi Cow Milk – 1 ½ cup ●      Cow Ghee – 3 tbsp ●      Salt – to taste ●      Dry Garam Masala Powder – 1 tsp ●      Cumin Seeds – ½ tsp ●      Sugar – ½ tsp ●      Chopped Onion – ½ cup ●      Tomato Pulp – ½ cup ●      Chopped Green Chillies – 2 ●      Crushed Ginger – 1 tsp ●      Broken Cashewnuts – 1 tbsp Recipe ●      Heat ghee and add cumin seeds till they crackle. ●      Add fenugreek leaves and sauté on medium flame; keep aside. ●      To another kadhai, add desi cow ghee. ●      Add the ground paste of onion, tomato, ginger, green chillies, and cashew nuts. ●      Sauté for 2-3 minutes while stirring continuously. ●      Add milk and cook until creamy. ●      Add green peas, sautéed fenugreek leaves and all spices. ●      Sprinkle garam masala and cook for 2 minutes. ●      Serve hot with Punjabi Rotis or Lachha Parathas. Daal-Baati (Rajasthan’s speciality) A rich source of proteins and fibrous serving Daal (Lentils) with wheat cooked Baati’s are an age-old favorite! Ingredients ●      Broccoli Florets – 2 cups ●      Desi Ghee – 3 tbsp ●      Chopped Onions – ¼ cup ●      Plain Flour (maida) – 2 tbsp ●      Desi Cow Milk – 2 cups ●      Fresh Milk Cream – 2 tbsp ●      Salt – to taste ●      Nutmeg (jaiphal) Powder – a pinch Recipe ●      Heat ghee in a deep pan, add onions and sauté for 1 minute. ●      Add broccoli and sauté for 2 minutes on medium flame. ●      Add water and cook broccoli well, and keep aside to cool. ●      Blend in a mixer to make a thick purée. ●      In a pan, heat ghee; add flour and sauté while stirring. ●      Add milk and cook for 5 minutes. ●      Add Broccoli-onion purée, salt, nutmeg powder and mix well. ●      Cook for 3-4 minutes.
