Methi Mutter Malai

A please-all dish, most popular curry of Punjabi cuisine, this sweet-strong gravy complemented with the scrumptious taste of fenugreek leaves is a go-to recipe for any lunch or dinner house-party. While fenugreek leaves help lowering blood sugar and maintaining cholesterol, green peas add heart-healthy minerals like magnesium, calcium and potassium.

 This dish with rich milk cream is a perfect treat for your taste buds and heart. It’s mild-sweet aroma and taste is loved even by kids, who otherwise make it difficult to be fed fenugreek leaves which has a bitter taste when consumed alone.

Ingredients

●      Chopped Fenugreek (methi) Leaves – 2 cups

●      Boiled Green Peas – ¾ cup

●      Desi Cow Milk – 1 ½ cup

●      Cow Ghee – 3 tbsp

●      Salt – to taste

●      Dry Garam Masala Powder – 1 tsp

●      Cumin Seeds – ½ tsp

●      Sugar – ½ tsp

●      Chopped Onion – ½ cup

●      Tomato Pulp – ½ cup

●      Chopped Green Chillies – 2

●      Crushed Ginger – 1 tsp

●      Broken Cashewnuts – 1 tbsp

Recipe

●      Heat ghee and add cumin seeds till they crackle.

●      Add fenugreek leaves and sauté on medium flame; keep aside.

●      To another kadhai, add desi cow ghee.

●      Add the ground paste of onion, tomato, ginger, green chillies, and cashew nuts.

●      Sauté for 2-3 minutes while stirring continuously.

●      Add milk and cook until creamy.

●      Add green peas, sautéed fenugreek leaves and all spices.

●      Sprinkle garam masala and cook for 2 minutes.

●      Serve hot with Punjabi Rotis or Lachha Parathas.

Daal-Baati (Rajasthan’s speciality)

A rich source of proteins and fibrous serving Daal (Lentils) with wheat cooked Baati’s are an age-old favorite! A traditional dish from Rajastha, thid one is served with lots of desi ghee and churma(sweet).

However, adding milk to the process of making Baati not only makes it healthier, but softer at the core and crisper on the outside.

Ingredients

●      Wheat Flour

●      Desi Cow Milk

●      Desi Ghee

●      Water

Recipe

●      Add flour, ghee and milk to knead the dough.

●      Add little water (if required) to make a stiff dough.

●      Divide the dough into small round balls making a dent with the thumb on top.

●      Bake in Microwave or a Baati gas-oven.

●      Dip in hot melted ghee and serve with Daal and Churma.

Veg Cream of Broccoli Soup

The pure desi milk crème added with antioxidant-rich broccoli is good for eyes, tissue repair, heart and digestive system. This low-fat hot cup of health is filling, along with being a good source of fibre, vitamin C, vitamin B, beta carotene, iron, zinc and other essential minerals. Add this most nutritional punch of vegetables to your diet plan!

Ingredients

●      Broccoli Florets – 2 cups

●      Desi Ghee – 3 tbsp

●      Chopped Onions – ¼ cup

●      Plain Flour (maida) – 2 tbsp

●      Desi Cow Milk – 2 cups

●      Fresh Milk Cream – 2 tbsp

●      Salt – to taste

●      Nutmeg (jaiphal) Powder – a pinch

Recipe

●      Heat ghee in a deep pan, add onions and sauté for 1 minute.

●      Add broccoli and sauté for 2 minutes on medium flame.

●      Add water and cook broccoli well, and keep aside to cool.

●      Blend in a mixer to make a thick purée.

●      In a pan, heat ghee; add flour and sauté while stirring.

●      Add milk and cook for 5 minutes.

●      Add Broccoli-onion purée, salt, nutmeg powder and mix well.

●      Cook for 3-4 minutes. Add fresh crème after switching off the flame.

Tip: Garnish with fresh pepper and blanched broccoli florets
